Baklava Pie



Ingredients
1 package of 2 puff pastry sheets
1 pound chopped pistachios (On a budget? A mixture of almonds, walnuts, and pistachios will do!)
1 cup butter
1 teaspoon ground cinnamon
1 cup water
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup honey

Directions
- Thaw pastry sheets at room temperature for 40 minutes before using.
- Preheat oven to 350 degrees. Butter the bottoms and sides of a 9” pie pan.
- Chop nuts and toss with cinnamon. Set aside.
- Fit one of the pastry sheets on the bottom of the pan.  Top with ¾ cup of sliced butter and chopped nuts / cinnamon mixture.
- Cover with the other pastry sheet, sealing the two pastry sheets together and folding the edges in. Top with remaining ¼ of sliced butter.
-Bake for about 40-50 minutes until baklava is golden and crisp.
- While the baklava is baking, make the topping sauce. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.
- Remove baklava from oven, cut small holes in the crust and immediately spoon sauce over and into the pie.
- Let cool & Enjoy!
